Andouille (pronounced ahn-DO-wee) is a spicy, Louisiana specialty sausage commonly served in both buns (called po' boys) and over rice and veggies in jambalaya. In this vegan version of the typically beef or pork sausage, we added roasted poblano peppers and wheat berries to deliver a taste and delightfully grainy texture that will have you singing me-oh-my-oh! Ingredients

Vital Wheat Gluten, Water, Organic Tofu (Water, Organic Soybeans, Magnesium Chloride, Calcium Chloride), Expeller Pressed Non-Genetically Engineered Canola Oil, Wheat Flour, Wheat Berries, Poblano Peppers, Shoyu Soy Sauce (Water, Non-Genetically Engineered Soybeans, Wheat, Salt, Culture), Garlic Puree, Granulated Garlic, Organic Cane Sugar, Potassium Chloride, Paprika, Annatto, Spices, Natural Vegetarian Flavors, Oat Fiber, Sea Salt, Natural Smoke Flavor.

Directions

Keep refrigerated. Serving: Grill (recommended): Lightly rub each thawed sausage with cooking oil and place on heated grill. Cook until hot, turning occasionally. Do not overcook! Sausages only take a short time to heat up on the grill. Or, place sausages on oiled sheet of foil with diced onions, peppers, and 2 tbsp of water or beer; wrap tightly. Grill for 30 minutes, turning occasionally. Microwave: Place thawed sausage on microwavable plate and cook on high for 30 seconds. Stovetop: Place thawed sausage in heated, lightly oiled pan and saute briefly. Add 1 tbsp water after sausage is browned and cook covered for 15 seconds. Or, place sausage in boiling water for 90 seconds. After opening, wrap tightly in plastic bag and refrigerate.
