In our bakery, we use wholesome ingredients in our rolls just as you do at home, except that we bake over 500 packages at a time, and because you expect them to stay soft and fresh for more than a day or two, we add a touch of emulsifiers (which are made from a vegetable source like soybeans) that help the flour retain moisture making the bread softer.
