According to the Center for Food Integrity, 5-6% of Americans identify themselves as vegetarians. That may seem like a small percentage, but it’s still a substantial number – approximately 17 million people. The trend seems to be gaining popularity, with varied voices, from entertainers to the president of the American College of Cardiology to the US Dietary Guidelines Committee, suggesting the addition of more plants to the American diet.
To celebrate this plant-based diet, Tribeca restaurateur and long-standing culinary partner to Wegmans, David Bouley, will partner with noted, local physician, Dr. Thomas Campbell, author of The Campbell Plan and co-author of The China Study. In the Test Kitchen at Next Door, Dr. Campbell will address the challenges and rewards of transitioning to a whole-food, plant-based lifestyle, and Chef Bouley and the staff at Next Door will create a four-course meal to inspire.
