  1. Heat oil in 5-quart braising pan on MED. Add mirepoix and cook 2-3 min to soften; do not brown.
     
  2. Add mushrooms and cook 1 min, until soft, but not browned; season with salt and pepper. Add broth; heat to simmering. Stir in basting oil, Worcestershire sauce, and croutons. Remove from heat. Let rest, covered, 5 min.
