Gluten-Free Green Bean Casserole

Directions

  1. Preheat oven to 350 degrees. Add beans to large pot of boiling, salted water; blanch 2-3 min until crisp-tender. Drain; transfer to bowl of ice water. Drain and set aside.
     
  2. Heat 1 Tbsp of olive oil in large pan on MED-HIGH until oil faintly smokes. Add half of mushrooms; cook, stirring, about 10 min, until dry. Remove from pan. Repeat process with remaining oil and mushrooms. Season with salt and pepper. Let cool.
     
  3. Mix cornstarch with 1 Tbsp water; set aside. Pour soup into pan; whisk in cornstarch mixture. Bring to a boil on MED-HIGH, stirring; cook 1 min.
     
  4. Mix beans and mushrooms in 13x9-inch baking dish. Stir in soup mixture; bake 45 min on center rack of oven.
     
  5. Top with crushed potato chips; return to oven 10 min.
Chef Tips
Crushed gluten-free onion crackers can be substituted for the potato chips.
