Zucchini "Ravioli"


You'll Need



  1. Slice zucchini lengthwise on mandoline into long flat strips about 1/8 to 1/16-inch thick. Lay flat in single layer on baking sheets; sprinkle evenly with 3/4 tsp salt. Let rest about 10 min at room temp.
  2. Add ricotta and basil to medium bowl; season with remaining salt. Stir to combine; set aside.
  3. Transfer zucchini slices gently into colander (do not rinse). Squeeze lightly using paper towel; pat dry. 
  4. Lay two slices flat on work surface horizontally; overlap with 2 slices vertically to form basket-weave pattern in center. Fill center with heaping Tbsp ricotta mixture; fold ends into center to form square package. Place folded-side down on serving dish; repeat until all slices are used.
