Tuscan Eggplant Zucchini Roll-Ups


You'll Need



  1. Slice zucchini lengthwise on mandoline into long flat strips about 1/8 to 1/16-inch thick. Lay slices flat in single layer on baking sheet; sprinkle evenly with salt. Let rest about 10 min at room temp.
  2. Transfer slices gently into colander (do not rinse). Squeeze lightly using paper towel; pat dry.
  3. Lay slices flat on work surface; spread each with 1 Tbsp sauce. Roll slice; garnish by dipping each end in shredded cheese.
Chef Tips
To serve warm, place roll ups in 350 degree oven about 5 min.
