Spinach & Mushroom Pinwheels



Preheat oven to 350 degrees.
  1. Heat 1 Tbsp oil in a skillet; cook, stirring mushrooms on MEDIUM, 3-4 min. Add garlic and cook 1 min.
  2. Lightly flour work surface. Using a rolling pin or your hands, roll or flatten dough to a rectangle, about 12" x 16".
  3. Top with sauteed mushrooms and garlic, chopped spinach, cheese and oregano. Drizzle with remaining oil and season with salt and pepper.
  4. Roll up jelly-roll style, as tightly as possible. Pinch the edges and fold under to seal.
  5. Place seam down on a large cookie sheet that's been lightly coated with cooking spray.
  6. Bake 45 min or until outside is browned and crisp. Let stand for 10 min before slicing crosswise in 1/2 to 3/4-inch pieces.
  • To feed a crowd, serve Spinach & Mushroom Pinwheels with Vegetable Beef Minestrone and a tossed salad.
  • Substitute 1 bunch broccoli for the spinach; break florets into small pieces and chop stems into 1/4-inch slices. Steam or microwave until crisp-tender; drain well and pat completely dry. Substitute 2 red peppers for the mushrooms. Cut into strips 1/4 to 1/2-inch thick. Stir-fry in 1 tsp oil until slightly limp before adding the garlic.
