Small melon baller


  1. Cut small slice from bottom of each potato to lay flat. Scoop out inside of each potato with small melon baller; discard potato flesh. 
  2. Place in braising pan with enough salted water to cover; cook on MED-HIGH, about 15 min, until fork-tender. Carefully remove from water with slotted spoon; drain on paper towel. Let cool; season with salt.
  3. Arrange potatoes cup-side up on serving platter. Fill each with 1 tsp guacamole; garnish with queso fresco and pumpkin seeds.

Potato halves can be prepped one day ahead and finished the day you are serving.
