Oven-Roasted Oysters



  1. Preheat oven to 450 degrees. Cut leeks crosswise in 1/8-inch pieces. Heat 1 Tbsp olive oil and pancetta in large skillet on MED heat; cook 5-7 min. Add leeks. Stir to combine; season with salt and pepper. 
  2. Cook, stirring occasionally, 5 min. Stir in hot pepper spread. Remove from heat; let cool.
  3. Remove top shell of oysters; loosen meat. Arrange in half-shells on baking sheet. Top each with 2 tsp leek-pancetta mixture.
  4. Bake oysters 3-4 min. Top each with 1/2 tsp warmed sauce. Serve immediately.
