Celebration Fruit Tray



  1. Slice off ends of pineapple; reserve top for garnish. Split pineapple in half lengthwise; cut each half into thirds lengthwise. Cut out core. With paring knife, slice between fruit and rind. Cut fruit into 8 slices (being careful not to cut through bottom of rind). Stagger slices on each wedge.
  2. Center pineapple top on platter; place pineapple wedges like spokes of wheel. Top with kiwi slices; fill spaces with berries and grapes.
Chef Tips
If using a stainless-steel platter, place a layer of lettuce or other greens as a base to protect it from fruit acids.
