Turkey Orzo Soup



  1. Heat oil in stockpot on MED. Add onions, tomato paste, and soup vegetables. Cook, stirring, 3-5 min, until soft but not browned.   
  2. Stir in herbes and stock; increase heat to MED-HIGH. Bring to simmer; add orzo and mushrooms. Cook, stirring occasionally, about 10 min.
  3. Add turkey; cook, stirring occasionally, about 5 min, until pasta and vegetables are tender. Season with salt and pepper; garnish with parsley.
