Thai Vegetable & Tofu Soup


You'll Need



  1. Add oil to stockpot on MED-HIGH. When oil smokes faintly, add mirepoix. Cook, stirring, about 4 min until softened but not browned. Add corn and water chestnuts. Cook, stirring, about 1 min. 
  2. Add Thai stock; bring to boil on HIGH. Reduce heat to MED. Cover and simmer, about 3 min. Add tofu and snow peas. Return to boil, uncovered. Season with salt.
  3. Ladle into warmed bowls; sprinkle with chopped cilantro.
