Thai Coconut Soup



  1. Heat coconut milk, chicken stock, lemon grass, and lime leaves in stockpot over MED-HIGH. Bring to simmer. Cover; continue to simmer 1 hour.
  2. Remove from heat. Strain through fine strainer, pressing with the back of spoon. Return strained soup to pot.
  3. Place pot back on MED heat; add chicken, fish sauce, and lime juice; bring to rapid simmer 3-5 min or until internal temperature of chicken reaches 165 degrees (check by inserting thermometer halfway into thickest part of chicken).
  4. Remove from heat; season with salt. Add cilantro leaves.
