Stracciatella Soup



  1. Heat oil in large stockpot on MED until oil faintly smokes. Add garlic and mirepoix; cook, stirring, 3-5 min. Add stock; simmer 5-8 min, Sir in spinach and parsley.
  2. Crack eggs into mixing bowl. Break yolks but do not mix or whip. Gently fold in 3 Tbsp cheese.
  3. Using large spoonfuls, add half egg and cheese mixture to soup; stir. Egg mixture will cook immediately in hot soup, forming thin strips. Add remaining egg mixture; stir until all egg is set, 1-2 min. Remove from heat; add remaining cheese. Season with salt and pepper.
