Split Pea & Ham Soup



  1. Heat oil in stockpot on MED-HIGH. Add mirepoix, leeks, and garlic; cook, stirring, 3-4 min, until lightly browned. Add split peas, ham hocks, broth, and lemon pepper seasoning; stir to combine. Bring to simmer; reduce heat to MED-LOW. Cook, simmering, 2 hours.
  2. Remove from heat; cool slightly. Remove and discard bones. Carefully add mixture to blender in two or three batches; puree until smooth. 
  3. Return puree to pot; add ham. Bring to simmer on MED, 3-4 min, or until ham is warmed. Garnish each serving with diced ham.
