  1. Heat oil in large stockpot on LOW. Add onions and carrots; cook, covered, about 5 min. 
  2. Add salsa, lentils, spinach, and water. Increase heat to HIGH; bring to boil. Reduce heat to LOW. Cover; simmer, 30-35 min, until lentils are tender.
