Sofrito Soup



  1. Puree onion, peppers, and garlic in food processor. Set aside.
  2. Heat olive oil in stockpot on MED-LOW heat. Add puree, paprika, salt and green stems. Cook, stirring frequently, 20 min.
  3. Add green leaves to pot; cook 2-3 min to wilt. Add broth; increase heat to HIGH. Bring to boil; add pasta. Cook pasta is nearly done.
  4. Season with salt and pepper. Serve.
