  1. Heat oil in large stockpot on HIGH. Add soup vegetables; cook, stirring, 2-3 min.
  2. Add chicken broth; bring to boil. Reduce heat to LOW; simmer, covered, 15-20 min or until potatoes are tender. Season with salt and pepper.
