Easy Italian Wedding Soup



  1. Add mirepoix, garlic, and stock to large stockpot. Cover; bring to simmer on MED-HIGH.
  2. Reduce heat to LOW. Simmer, covered, about 20 min, until veggies are tender. Add meatballs; return to simmer. Cover; cook, 15 min.
  3. Add uncooked pasta and escarole; return to simmer. Cook, about 10 min, until pasta is tender. Season with salt and pepper; garnish with grated cheese.  
Chef Tips
For smaller meatballs, pinch in half and round.
