Cream of Broccoli Soup

Ingredients

Handheld blender; 3-qt saucepan

Directions

  1. Trim broccoli. Cut into florets; set aside. Cut remaining stems into 1/2-inch slices.
     
  2. Melt butter in large saucepan on MED. Stir in broccoli stems and mirepoix; cover. Cook 10 min. Add stock and thyme; stir and heat to boiling.
     
  3. Whisk together flour and water until smooth; stir into soup. Return to boiling; cook 1 minute. Remove from heat.
     
  4. Puree soup carefully in pot with handheld blender until smooth. Whisk in cream. Add broccoli florets; return to heat and simmer on LOW 10 min. Season with salt and pepper. Ladle into warmed bowls; sprinkle each serving with cheese.
Chef Tips
Leftover soup can be cooked down to thicken for use as a sauce over rice or pasta.
