Chicken Rice Soup with Spinach



  1. Heat oil in medium stockpot on MED-HIGH. Add chicken; cook, stirring occasionally, about 2 min until slightly browned. Add onion and garlic; cook, stirring frequently, about 2 min until soft and lightly browned.
  2. Add spinach; cook, stirring occasionally, 1-2 min until completely wilted.
  3. Add broth and tomatoes; cover. Bring to boil; reduce heat to MED-LOW. Simmer 10 min.
  4. Stir in rice; remove from heat; let rest 5 min. (allowing rice to steep). Season with salt and pepper.
  • Substitute 12 cups (about 1 large head) escarole, trimmed and chopped, for spinach.
  • Substitute 2 cups thinly sliced precooked sausage for chicken.
  • Sprinkle individual servings with grated Parmesan or Romano cheese.
