Cauli-Clam Chowder



  1. Add pancetta, thyme, celery, and onions to stockpot on MED. Cook, stirring, about 3 min until onions and celery are soft, but not browned. Add potatoes; cook, stirring occasionally, 7 min.  
  2. Stir in clam juice, cauliflower puree, and chicken stock. Add clams; simmer 10 min or until potatoes are tender. Garnish with parsley.
Chef Tips
  • For a lighter consistency, add an additional 1-2 cups stock.
