Stick blender


  1. Heat oil in large stockpot on MED. Add carrots, and celery and onions; cook, 10 min, until soft and lightly browned.
  2. Add broth to pot; bring to simmer. Simmer, 45-50 min, until tender. Add carrot juice, ginger blend, and salt; season with pepper. 
  3. Puree soup with stick blender on LOW until smooth. Stir in coconut oil until melted. Garnish with toasted pumpkin seeds.
