Black Bean Soup



  1. Heat oil in stockpot on MED.
  2. Add mirepoix and cumin; cook, stirring, about 10 min until soft. Add garlic, cook, stirring, 1 min.
  3. Stir in black beans, tomatoes and broth. Bring to simmer. Simmer uncovered about 15 min.
  4. Remove from heat. Puree small batches in blender (being careful to avoid getting burned) or use hand blender. Garnish with cilantro and sour cream.
Chef Tips
For chunky style, puree only half.
