Beef Barley Soup


You'll Need



  1. Heat olive oil in stockpot on MED-HIGH until oil faintly smokes. Add beef; cook, stirring, about 10 min, until browned. Add mirepoix; cook, stirring, about 10 min, until soft and lightly browned.
  2. Reduce heat to MED; add tomatoes, cook 10 min. Add barley and thyme; cook 5 min. Add salt, pepper, stock, and water. Bring to simmer on HIGH.
  3. Reduce heat to LOW; cook about 45 min until barley is tender. Skim fat from surface. Season with salt and pepper. Ladle soup into bowls; garnish with chopped parsley.
