Watercress Salad with Crispy Shiitake Mushrooms



  1. Make dressing: In a small bowl, add orange juice, salt, and pepper; slowly pour 1/3 cup olive oil in bowl while whisking. Set aside.
  2. Heat 1 cup of olive oil in pan large skillet on MED-HIGH, until oil faintly smokes. Add mushrooms; cook 12-15 min, stirring occasionally, until firm and crispy. Drain on paper towels; season lightly with salt.
  3. Arrange watercress on serving platter. Top with mushrooms; drizzle with dressing.
