Warm Corn & Spinach Salad



  1. Remove corn from cob into a bowl, scraping well to get remaining pieces and juices. Set aside.
  2. Add olive oil to large skillet on MED. Add onions. Cook, stirring often, 10 min, until onions are soft, but not browned. Add spinach. Cook, stirring often, 4 min, or until spinach is wilted. Season with salt and pepper. Add corn; cook, stirring constantly, about 5 min.
