Vegetable Fried Rice



  1. Heat wok on HIGH. Add coconut oil; swirl until melted. Add mushrooms; cook, stirring, about 2 min, until browned. Add peppers, garlic, and ginger; cook, stirring, about 1 min.
  2. Add cooked rice and soy sauce to pan. Cook, stirring often, 3-4 min. Remove from heat; season with salt and pepper. Garnish with green onions before serving.
