Tuscan Roasted Squash & Kale



  1. Preheat oven to 350 degrees. Add Tuscan seasoning and 1 1/2 Tbsp oil in large bowl; mix to combine. Add squash and onions; toss to coat. 
  2. Arrange squash and onions in single layer on parchment paper-lined baking sheet. Roast 30 min; remove from oven.  
  3. Toss kale with remaining oil; season with salt and pepper. Add kale to pan with veggies; toss lightly to combine. Roast about 30 min, until browned and tender. Season with salt and pepper; serve.
