Soft Polenta with Parmigiano-Reggiano



  1. Melt butter in large saucepan on LOW.
  2. Remove from heat. Add cornmeal, cornstarch, Parmigiano-Reggiano, salt, and pepper; blend until well combined and cornmeal has become bright golden color.
  3. Add cream cheese; blend well. Return to heat. Gradually whisk in heavy cream and water. 
  4. Raise heat to MED-HIGH. Bring polenta to a boil; whisking constantly. Reduce heat to MED-LOW. Cook about 25 min, stirring often. (Watch carefully that polenta does not stick to pan or burn.)


Chef Tips
Use a heat-resistant rubber spatula to stir the polenta as it's cooking.
