Roasted Sweet Potatoes & Leeks


You'll Need

13x9-inch baking dish


  1. Preheat oven to 350 degrees. Trim leek roots slightly; discard roots and dark green ends. Slice each leek in half lengthwise. Add to bowl of cold water; stir to loosen any dirt. Remove with slotted spoon; drain.
  2. Add leeks, potatoes, water, and rosemary to 13x9-inch baking dish. Sprinkle with salt and red pepper flakes; drizzle with oil. Cover with foil; bake 1 hour until potatoes are tender.  
  3. Transfer potatoes to cutting board; slice into 1/2-inch thick rounds. Transfer potato slices and leeks to serving platter.
