Roasted Ratatouille



  1. Preheat oven to 350 degrees. Preheat baking sheet 5 min. Toss peppers, mushrooms, squash, and eggplant with basting oil in large bowl. Remove baking sheet; place vegetables on pre-heated pan in single layer. Roast about 1 hour 15 min until tender.
  2. Remove vegetables from oven; toss with marinara sauce in medium bowl.

Garnish with kalamata olives.
