Roasted Leeks & Baby Squash



  1. Preheat oven to 450 degrees. Toss leeks and 1 1/2 Tbsp basting oil in large bowl; season with salt and pepper. Arrange in single layer on parchment paper-lined baking sheet. 
  2. Roast, 10 min. Remove from oven. Combine squash and remaining 1 1/2 Tbsp basting oil in same bowl; toss. Season to taste with salt and pepper. Spread over leeks. 
  3. Roast, 15 min, until veggies are tender.
Chef Tips
If you’re roasting veggies with other items in the same oven, you may have to adjust veggie cooking time.
