Roasted Cranberry Almond Cauliflower "Rice"



  1. Preheat oven to 400 degrees. Toss cauliflower rice and basting oil in large bowl; season with salt and pepper.
  2. Spread evenly on parchment paper-lined baking sheet; roast about 25 min until lightly browned and tender.
  3. Remove from oven; add butter, almonds and cranberries. Stir to melt butter. Season with salt and pepper.
