Roasted Cauliflower & Snow Peas with Tom Tom Sauce



  1. Preheat oven to 450 degrees. Toss cauliflower and 2 Tbsp basting oil in large bowl; season with salt and pepper. Arrange in single layer on parchment paper-lined baking sheet. 
  2. Roast about 35 min, until caramelized, turning once halfway through. Remove from oven; add snow peas. Drizzle remaining basting oil over snow peas; gently toss with cauliflower. Season with salt and pepper.
  3. Roast 10 min, turning halfway through. Transfer veggies to serving bowl. Add Tom Tom sauce; toss to combine. Garnish with sesame seeds.
