Roasted Cauliflower & Butternut Squash Noodles



  1. Preheat oven to 400 degrees. Toss cauliflower and 2 Tbsp oil in large bowl; season with salt and pepper. Arrange in single layer on parchment paper-lined baking sheet. Toss butternut squash noodles and remaining oil in large bowl; season with salt and pepper. Set aside.  
  2. Roast cauliflower 20 min; remove from oven. Add butternut squash noodles to baking sheet with cauliflower; toss to combine. Return to oven; roast about 10 min until lightly browned and tender. Transfer to serving platter; garnish with pecans and chives.
