Roasted Carrot, Apple & Cherry Salad



  1. Preheat oven to 450 degrees. Toss carrots and basting oil in large bowl; season with salt and pepper. Arrange in single layer on parchment paper-lined baking sheet.
  2. Roast, 10-12 min. Remove from oven; set aside to cool.
  3. Toss carrots, apples, cherries, vinegar, and olive oil in large bowl; season with salt and pepper. Fold in horseradish and sunflower kernels.

  • Carrots can be roasted the day before making the salad.
  • You can toast sunflower seeds in pan over MED heat; stirring continuously.
