Roasted Asparagus with Parsnip Puree



Make This First


  1. Preheat oven to 450 degrees. Toss asparagus and basting oil in large bowl; season with salt and pepper. Arrange in single layer on parchment paper-lined baking sheet. Roast, 8-10 min, until lightly browned and tender, turning once halfway through.
  2. Whisk together parsnip puree and half-and-half. Arrange roasted asparagus on serving platter; top with parsnip mixture. Garnish with pine nuts; drizzle with vinegar.
