Roasted Acorn Squash with Pomegranate



  1. Preheat oven to 400 degrees. Toss acorn squash, oil and seasoning in large bowl. Arrange in single layer on 2 parchment paper-lined baking sheets.
  2. Roast about 35 min, until lightly browned and tender, turning once halfway through. Top with pomegranate arils during last 5 min of cook time. Transfer to serving platter; drizzle with maple syrup. Garnish with parsley.
