Red Smashed Potatoes



  1. Place potatoes in large pot; cover with cold water. Bring to boil; reduce heat. Simmer until tender when pierced with tip of knife, 35-40 min; drain.
  2. Return potatoes to pot on LOW (to remove excess moisture), 3-5 min.
  3. Add 1/2 cup milk, butter, sour cream, and chives; mash with potato masher or hand mixer. Add remaining milk as needed.  Season to taste with salt and pepper.
Chef Tips
Using a hand mixer produces smoother a texture.
