Rappi with Seasoned Tomato Sauce



  1. Add rappi to boiling, salted water; blanch 2-3 min. Drain rappi; transfer bowl of ice water. Drain; pat dry with paper towel.
  2. Heat oil in skillet on MED until oil faintly smokes; add garlic and onions. Cook until soft, not brown, about 1 min. Add wine; bring to boil. Cook to reduce, about 30 sec.
  3. Add marinara sauce; season with salt and pepper. Add rappi to heat through, 2-3 min. Transfer to platter; sprinkle with cheese.
