  1. Blanch carrots 3 min in large pot of boiling, salted water. Drain; transfer to bowl of ice water. Drain and set aside. Blanch rappi 2 min in same pot. Drain, transfer to bowl of ice water. Drain; set aside.
  2. Heat basting oil in large skillet on MED-HIGH. Add mushrooms; cook, stirring, 2 min. Add carrots and rappi; toss well to combine. Season with salt and pepper. Cook, stirring, 3 min.
