You'll Need

Two 12-count cupcake tins


  1. Preheat oven to 350 degrees. Place cupcake tins on baking sheet. Spray every other cup with cooking spray; add 1 tsp olive oil to each sprayed cup. Place in oven; heat 10 min.
  2. Mix salt and flour in large bowl; set aside. Add eggs and milk to separate bowl; whisk to combine. Slowly add milk mixture to flour mixture; whisk to combine.
  3. Pour batter into oiled cups until 3/4 full. Bake, 40-45 min, without opening oven door, until golden and puffed. Remove from oven; poke each popover with fork to release steam. Serve immediately.


Chef Tips
  • Batter can be made day before. Doing so will allow the batter time to rest, yielding better results. When ready to bake; gently stir batter and prepare as directed.  
  • To make mini popovers, use a 24-count mini muffin tin. Bake at 350 degrees for 30-40 min.
