You'll Need



  1. Add parsnips and water to saucepan. Bring to boil on HIGH. Reduce heat to MED; cover. Cook, 12-15 min, until very tender. Drain well; return to heat on MED. Cook about 1 min until dry; do not brown.
  2. Add parsnips and half-and-half to blender; season with salt and white pepper. Puree until smooth.
Chef Tips
For a lighter option, omit half-and-half.
