Mexican Black Beans



  1. Heat olive oil, onion, and peppers in saucepan on MED-LOW; cook 8 min until soft. Add garlic, bay leaf, and oregano; cook 5 min.
  2. Turn off heat; add water, stirring to loosen browned bits from bottom of pan. Pour mixture into blender; puree 1-2 min until smooth.
  3. Add black beans and pureed mixture to saucepan. Heat on MED-HIGH 10-12 min. Season with salt. Transfer to serving platter; garnish with cilantro.
Chef Tips
Be sure to add salt at the end of cooking; adding salt during cooking will prevent the beans from breaking down.
