Maple Squash Puree



  1. Place squash, skin-side up, on microwave-safe dish; cover with microwave-safe plastic wrap. Microwave on HIGH 6-8 min until tender. Let rest covered 10-15 min, or until cool enough to handle. Carefully remove plastic wrap to avoid steam.
  2. Scoop squash from peel; transfer to food processor. Add butter and maple syrup. Season with salt. Process 2-3 min until smooth, occasionally scraping down sides of processor.
Chef Tips
  •  Replace butternut squash with hubbard, carnival, or acorn squash.
  • Finish with Food You Feel Good About Pumpkin Seed Oil or garnish with chives.
