Lemon-Garlic Artichoke Rice



  1. Melt butter in pan on MED-HIGH. Add leeks, garlic, artichokes, salt, and pepper. Cook, stirring occasionally, about 5 min, until leeks are soft.
  2. Add wine; cook, stirring, about 5 min, until liquid is reduced by half. Add broth, lemon zest, and rice; stir to combine.
  3. Reduce heat to LOW. Cover; simmer, about 12 min. Remove from heat; let stand, covered, 10 min. Fluff with fork and serve.
