Latkes (Potato Pancakes)



  1. Preheat oven to 350 degrees. Whisk eggs in medium mixing bowl. Add baking powder; whisk until well-blended. Combine onion, potato and matzo meal in another bowl. Add egg mixture to potato-onion mixture; stir to blend well. Season with salt and pepper. 

  2. Add olive oil to large skillet on MED-HIGH. Scoop potato mixture by rounded half-cup measures into skillet. Flatten with spatula to make pancakes.

  3. Cook pancakes about 3 min until each side is paper-bag brown. Repeat until all mixture is used. 

  4. Transfer pancakes to baking sheet: bake on center rack of oven 10 min. Transfer to paper towel or parchment paper-lined baking sheet to absorb excess oil. 

Chef Tips
  • Shred potatoes in food processor.
  • Can be made a day ahead and microwaved to reheat.
  • Great served with crème fraiche or Greek yogurt and garnished with minced chives.
