  1. Preheat oven to 350 degrees. Heat oil in pan on MED-HIGH until oil faintly smokes. Add sofrito, rice, olives, stock, achiote packet, adobo seasoning, and peas; stir. Bring to a boil on HIGH; turn off heat. Cover; place in oven 20 min.
  2. Remove from oven. Let rest 10 min, covered. Fluff with fork.
